There are two ways to use this variable:

passing it as a command line argument just like Job mentioned:

cmake -DCMAKE_INSTALL_PREFIX=< install_path > ..
assigning value to it in CMakeLists.txt:

SET(CMAKE_INSTALL_PREFIX < install_path >)
